在連空氣都帶甜的二月,坐在有海風與斜陽交織的ÉPURE露天庭園,一次過品味米芝蓮星級法式酒餚,與亞洲50最佳酒吧第二位The Old Man 的海明威主題雞尾酒,每一口都令人有被愛的感動。
在整個二月每天下午,都可以在尖沙咀海景下,一面品嚐連續五年獲米芝蓮星級殊榮的ÉPURE 大廚Nicolas Boutin ,精心炮製的法式酒餚。同時享受連續獲全球及亞洲50最佳酒吧殊榮的The Old Man 調酒師Nikita Matveev 以長時間提煉製作的特色雞尾酒。
在放鬆的下午,坐在舒適的戶外庭園,吹著海風,酒餚選擇由香脆小吃至大廚推介的馬達加斯加魚子醬均備,適合不同喜好。
The Old Man 所有特色雞尾酒均以海明威小説為名,按小說出版年份,探索海明威創作靈感而調製,各杯口味樣式都截然不同。
The Sun Also Rises #1926 是其中一款The Old Man 最受歡迎的雞尾酒,清新酸甜,非常適合女士作開胃酒。成份中的三種酒均以不同手法預先處理:以油脂浸泡法 (Fat washing) 將椰香加進蘋果酒中;再在杜松子酒內浸入咖喱葉;及以甜苦艾酒慢煮斑蘭葉,由香氣至味道都帶豐富層次,卻又清爽宜人。
Men without Women #1927 是愛烈酒男士之選,外觀如將愛爾蘭咖啡色彩對調,金黃玉液內含蒸餾咖啡、愛爾蘭威士忌、椰子及咸牛油。而黑色綿滑厚泡,便是以司陶特 (stout) 黑啤酒濃縮後注入氣體而成。入口先是温熱啤酒麥香,再來冰涼咖啡威士忌,雖烈卻又帶點温柔,如Men Without Women 各短篇中描述的男人,強烈的外表卻有温柔的內心。
配合烈酒,一份烤火腿芝士三文治會是男人的浪漫,以上中下三層芝士包裹麵包及火腿,外脆內軟的咸香正合胃囗。
香濃軟滑蟹餅是百搭酒餚,不同雞尾酒令我感受到蟹餅鮮味的不同層次。
自家製煙熏三文魚,主廚為保持三文魚鮮味口感如刺身,小心控制煙熏時間,厚切更柔潤而不膩。
以烤棉花糖甜香杜松子酒,西瓜李酒麯,及酢漿草等原料調製的粉色 A Day’s Wait #1933 之甜酸味相配合。
原罐馬達加斯加皇家貝禮魚子30克,不但性價比高,閃耀灰黑光澤的魚子咸香度適中,魚油鮮香。先單獨品味,再配上自家製配料做出各種變化。別忘記點上一杯A Moveable Feast #1964,這以蒸餾法將蜆貝、海藻、海水及伏特加濃縮成海洋鮮味。再加入車厘茄、椰子、羅勒番茄籽過濾成清澈雞尾酒後放入芝士蠟瓶中24小時,成為充滿鮮味的泉源。杯上飾上一片蠔葉,飲時先咬下一小口蠔葉,再喝一口雞尾酒,鮮味倍加,再一口魚子,正如書名流動的饗宴。

在拍攝時調酒師Nikita Matveev見我對調酒有興趣,特意教我調製兩款特色雞尾酒,做法簡易,加上他全程都細心講解,製成品似模似樣,令人鼓舞。唯材料全是從他們實驗室自製,要喝也是一定要找他們。活動期間每星期還會推出特別版飲品,是不能錯過的放鬆時光。

Afternoon Drinks & Snacks at the Lounge
From 29 January through February, Chef Nicolas Boutin of ÉPURE and Nikita Matveev of The Old Man create a rare collaboration, a relaxing afternoon drinks and dining experience in the spacious lounge of ÉPURE every day from 2:30pm to 6pm. You may enjoy the elegant French hors d'oeuvres by Chef Nicolas along with Nikita’s innovative mixology creations supported by Pernod Ricard.
Ten experimental drinks are named after classic Hemingway novels. These concoctions incorporate local flavours like calamasi, pandan leaf and coconut are mixed with botany-infused liquors such as rotovap curry KI NO BI SEI gin and sous-vide Mangisteen Olmeca liqueur. This pop up would be a great chance to experience The Old Man’s out-of-the-box libations amidst the beautiful harbour views from ÉPURE’s outdoor garden.
The famous The Sun Also Rises #1929 (On the right of photo) is an Asian-influenced, aromatic drink that is initially bitter, with the taste of coconut followed by a smoothly, intensified aroma from pandan. A curry-leaf-infused KI NO BI SEI gin is blended with capra fat-washed applejack, a sweet vermouth infused with pandan and dried coconut.
A Movable Feast #1964 (On the right of photo), upstaging the previous drink, is spicy and savoury. The combination of sea water, Absolut vodka, tomato juice, coconut syrup and lemon juice creates a big room for mystery. This clear, complex creation is given a minimalist touch, garnished with a piece of oyster leave.
Chef Nicolas is putting high-end spins on some of our favourite bar foods, from the golden Crab Fritter and classic Ham & Cheese ‘Croque’ to luxurious selections like Homemade Smoked Salmon and Baeri Royal Caviar & Garnish.
Making its first foray into the lounge of ÉPURE, The Old Man takes the center stage from the underground drinking den to the tucked away alfresco garden so that one could enjoy creative cocktails and scrumptious bar bites with lounge beats and a gasp of fresh air under the clear sky. Even under the Coronavirus pandemic, guaranteeing a perfect hotspot for pre-dinner drinks or a mid-week boozy session.
